Backcountry Green Chile Stew recipe!!

By Doug Campbell

By popular demand here is the recipe for “Doug’s Grand Canyon Canyon Famous Green Chile Chicken Stew”!  Please note I eyeball the amounts based on how many people I am feeding and the consistency of stew desired…. so no quantities included. Depending on whether you are cooking for front country or backcountry camp….you can use fresh/canned or dehydrated/pre-cooked ingredients.   Here it goes…….

Add to a pot the following ingredients:

Green Chile sauce (I recommend 505 Southwestern brand), chicken, quick cook brown rice, pinto beans, dehydrated hash browns, corn, onion, garlic, tomatoes.

Add water to desired consistency.  Season with Mrs. Dash Garlic Herb seasoning.

Bring to a boil for 5 minutes then simmer for 15 minutes. Stir frequently.

Serve in a bowl with Monterey jack cheese and a tortilla!

Enjoy!
